When someone at a food establishment orders one scoop of something, it’s often a large scoop. However, when they order two scoops, they often get two smaller scoops. To prevent this, they order one scoop to establish that large scoop size, and then order another scoop.

That’s why you wait to ask for extra rice until after they’ve already done the first scoop, that way they have already shown their hand re: what a standard scoop is.
Also yes, charging extra is robbery. If you do no beans + double rice, do you still get up-charged??

The secret in-person is to ask for a regular portion, and then upon them putting that first scoop, say “actually make it double”
That way they have shown their hand on what 1 serving is, and you can revel in your intellectual domination as they weep and give you more fillings
