Armadillo Eggs (stuffed jalapeños)

“Armadillo eggs” are jalapeño peppers stuffed with cheese. Armadillos don’t lay eggs. It’s not known who coined the name.

15 August 1992, San Francisco (CA) Chronicle, pg. B1:
The Road Kill Cafe, a booth set up by Bequette Appetizer, expects to dole out 10,000 samples of deep-fried finger food, including peach cobblers called Fuzzy Buns, southwestern stuffed jalapeños named Armadillo Eggs and corn chips stuffed with cheese called Mama Nachos. The Bixby, Okla.-based prepared food vendor will charge restaurants about 25 cents per appetizer, with consumers paying about twice that price at retail.

5 May 1995, Chicago (IL) Daily Herald, section 6, pg.16:
...Tavern On The Fox, 24 N. Broadway, has $1 armadillo eggs (your guess is as good as mine).

14 June 1995, Chicago (IL) Tribune, pg. 5A:
You might want to take a crack at the armadillo eggs (6 for $3, 12 for $5.95). No, they’re not really armor-coated eggs—armadillos don’t lay eggs. Instead, they’re jalapeño peppers that are slit open, filled with Cheddar cheese and deep-fried. The crispy coating offers fine contrast to the cheese that oozes out on first bite. As expected, there’s a bit of peppery bite but not so fiery as to put them in the four-alarm category.

26 September 1996, Syracuse (NY) Post-Standard, pg. C7:
“Armadillo Eggs” ($4.99)—less colorfully known as stuffed poblano chilies—were crisp and hot from the deep-fryer, full of melted cheddar and served with mustard dipping sauce.

6 March 2003, Ventura County (CA)Star, Out, pg. 48:
Other popular menu items are buffalo wings with a secret, spicy sauce, armadillo eggs (stuffed jalapeños and cream cheese), thirsty chicken, chicken teriyaki, and French dip, veggie, meatball or steak sandwiches.
