Chowder (especially clam chowder) is a New England dish. What is Texas chowder?
On ABC’s Nightline television program of September 17, 2008, someone who was cooking chili for the Texans stranded from Hurricane Ike said that he was making “Texas clam chowder.” Chili has also been called “Texas chowder,” although the terms are not frequent.
The Dove’s Nest Restaurant (Waxahachie, TX) popularized a “Texas chowder” in the 1990s that contains condensed potato soup, cheddar cheese, Worcestershire sauce and sausage.
1/2 c. chopped onion
1 c. chopped green bell pepper
1/4 c. butter
1 can condensed cream of potato soup
3 c. milk
1 tbsp. Worcestershire sauce
1 tbsp. chicken-flavored instant bouillon, optional
1 lb. ground venison or turkey sausage
2 (16 oz.) cans cream-style corn
4 c. shredded cheddar cheese
In a large pot, saute onion and green pepper in butter 5 minutes. Stir in soup, milk, Worcestershire and bouillon. Simmer uncovered 15 minutes.
In separate pan, brown sausage, then add to soup. Stir in corn. Simmer 15 minutes more. Stir in cheese until melted. Serves 6-8. Any Texan worth his boots will love this chowder. A hardy man pleaser.

2 1/2 c milk
1 tb worcestershire sauce
1 tb chicken stock base
1 lb bulk sausage; browned
2 cn cream style corn; 17 ounce -ea.
1 ts crushed red pepper
2 c shredded cheddar cheese
1/4 c chopped cilantro
Saute the onion, red pepper and green pepper in the butter in a large stockpot until tender.
Add the potato soup, milk, Worcestershire sauce, chicken stock base, sausage, corn, red pepper, cheese and cilantro; mix- well.
Simmer until the cheese is melted, stirring frequently.
Ladle into soup bowls.
During the winter months, this is one of our most popular soups, a chowder hearty enough to be served as a one-course meal.

2 tbsp. Texas dry rub (recipe below)
2 tbsp. lemon juice
1 tbsp. olive oil
1 tbsp. fresh rosemary, minced
½ pound raw shrimp, shelled, deveined, tails on
3/4 c. butter
2 c. yellow onions, chopped
1 medium jalapeño, minced
2 c. celery, chopped
2 c. carrots, chopped
1½ tsp. rosemary, minced
1 tsp. oregano, minced
1 tsp. coarse salt
1 tsp. black pepper
4 c. red potatoes, peeled and chopped
5 c. chicken stock
½ c. flour

Wacky Day Out!!
Rhonda’s Birthday was celebrated with a trip to Waxahachie, Texas. The Quilt shop, Common Threads, was our first stop—(we were all bad)—this is my purchase—for our Red White and Blue quilt blockswap.
the second stop was The Dove’s Nest, a really neat Lunch Stop..Antique Shop. Two got the Soup of the Day, Texas Chowder—DELICIOUS! Visit them here. I have the cookbook and it is fantastic. The Texas Chowder is included Along with sandwiches, soups, wonderful pastas, and desserts (We shared Blackberry Bread Pudding—YUMMY!).
