Brownie Butts

Brownie-pan edges can be crunchy treats. Mary Louise Butters of Butters’ Brownies of Austin began selling brownie edges at the Austin Farmers’ Market in 2004, calling them “Brownie Butts.” The name was trademarked in 2006.

The Austin (TX) Chronicle has described Brownie Butts as “essentially twice-baked brownie biscotti.”

Mary Louise Butters shows up at the Gonzales Street kitchen on Wednesdays to bake her incredibly intense and delicious brownies and comes back on Thursdays to pack them up and deliver them to retail outlets around the city. Baking is an artistic calling she couldn’t resist. A few years back, she quit her day job to stay home and create fiber art and signature quilts, but slow sales made her realize “people don’t get hungry for art as often as they should.” Butters’ friends encouraged her to build a business around the great brownie recipe she’d been given by local legend John Henry Faulk and his wife, Liz. Butters took the dare. These days, she bakes eight different flavors of chocolate brownies (922-0342) and sells them at Eco-Wise, Therapy, Ruta Maya, Shag, Hill Country Weavers, Little City, Breed & Co., Gardens, Pacha, Northwest Hills Pharmacy, Trianon, and the Downtown Farmers’ Market. Butters’ brownies are intense, and they are also expensive, so she’s not looking to place them just anywhere. “It’s a $4 brownie, and very much worth it, but they sell best in upscale shops and salons,” she reports. “That kind of place can’t seem to keep them in stock.” Butters has new flavors in development and will soon market the tasty trimmings of her chocolate delights, known as Brownie Butts.

Brownie butts and other chocolate fever dreams.

I’m traveling and up to my soon-to-be-lasered eyeballs in work, so I apologize for the tumbleweeds blowing through here lately. Consider this a quick peak at my adventures at the 2nd Annual Austin Chocolate Festival last weekend, where I sampled mouthwatering delicacies previously unknown to this mortal (chocolate, not derrière!). Let’s just say that enough chocolate was consumed that my normally green eyes had morphed to a dark cocoa brown by the time I left the premises. I’ll be back … (And no, I don’t know Miss Brownie Butt personally!)

Brownie Butts
We like big butts, and we cannot lie.

We also like small, crunchy butts — we can’t deny.

No, we’re not rapping about badonkadonks. We’re singing the played-out karaoke song praises of Mary Louise Butters’s sweet and tasty Brownie Butts. Made fresh in Austin, Texas, the chocolatey chunks are made from the edges, the most coveted part of every batch.

The treats come in tons of flavors like Jane (classic chocolate and walnut), Sane Jane (no nuts), Aphrodite (with a hint of rose essence), Zen (fresh and crystallized ginger thrown in), Aztec God (spiked with chile), Peace (pecans and cranberries), and Kona Buzz (hazelnuts and coffee beans), so you can mix-a-lot (ha). Of course, you can also order them in their typical shape if you like them square and big.

Either way, you can kiss these Butts.

This came in to my inbox yesterday and I thougth it was one of the smartest things I have ever heard of…brownie butts. You know… the brownie pan edges. Not sure about you, but the edge is my favorite part of the entire batch. This company specializes in selling in only the edges, or the “butts” as they call them. It reminds me of Seinfeld’s muffin tops. Anyway, it made me happy.

In addition to the brownies, Butters also features a product called Brownie Butts, which are essentially twice-baked brownie biscotti. The Butts pack just as much chocolate power into smaller, crunchier morsels and are available in all the flavors.
