Blue Velvet Cake

A blue velvet cake is a different-colored version of the popular red velvet cake. The velvet cakes are layer cakes with cream cheese icing. The song “Blue Velvet” (1950) and the movie Blue Velvet (1986) helped to popularize this name.

“Blue velvet cake” has been cited in print since at least 2001. Betty Crocker introduced a popular “Royal Blue Velvet Cake” recipe in February 2011.

“Blue Velvet” is a popular song written in 1950 by Bernie Wayne and Lee Morris. Originally recorded and performed by Tony Bennett, who charted with it in 1951, it was remade four years later by the traditional R&B group, The Clovers. Many other artists have recorded the song, most notably, Bobby Vinton, and Lana Del Rey. David Lynch wrote and directed a film of the same name.

You can do blue velvet! This article in cooking.com says this woman made a blue velvet cake for an Elvis themed party. Here’s the link:

White cake with blue icing will not be a velvet cake. Velvet cake is called velvet cake because of the texture. Also, it only has about 2 tablespoons of cocoa in it, so the food coloring is where the major color comes from—not the chocolate.
Blue Velvet Cake
2 1/4 cups cake flour
2 tablespoons unsweetened cocoa
2 teaspoons ground cinnamon
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup unsalted butter, at room temperature
1 1/2 cups sugar
2 eggs, at room temperature, lightly beaten
2 teaspoons pure vanilla extract
2 bottles (1 ounce each) liquid food coloring, or food coloring paste
1 cup buttermilk or sour cream (not fat free), at room temperature

1/2 lb butter, at room temperature
2 eggs
1 tablespoon cocoa powder
2 ounces blue food coloring
2 1/2 cups cake flour
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 tablespoon vinegar
8 ounces cream cheese, softened
1/2 cup butter, softened
1 cup melted marshmallow
1 lb confectioners’ sugar
1 cup shredded coconut
1 cup chopped pecans
