“Cauliflower is just albino broccoli”

“Cauliflower is just albino broccoli” is a saying that has been printed on many images. The saying is based on cauliflower’s color (usually white), that both have edible flower buds, and that both are from Brassica oleracea. There are many differences between the two, however.

Cauliflower is one of several vegetables in the species Brassica oleracea in the genus Brassica, which is in the Brassicaceae (or Mustard) family. It is an annual plant that reproduces by seed. Typically, only the head is eaten – the edible white flesh sometimes called “curd” (with a similar appearance to cheese curd). The cauliflower head is composed of a white inflorescence meristem. Cauliflower heads resemble those in broccoli, which differs in having flower buds as the edible portion. What’s the difference between cauliflower and broccoli?
Let’s start with what makes them the same, shall we? Both cauliflower and broccoli are in the same family as cabbage and Brussels sprouts. The parts we eat on all of these veggies are actually flower buds!
 
As far is differences go, cauliflower is actually just an albino broccoli…jokes! It’s not. Though they are quite similar, the edible flower buds I mentioned are more spaced out in broccoli. Cauliflower has less calories and carbs, while broccoli has more vitamins and minerals.

Sort of not really.
Cauliflower is like an immature broccoli. Broccoli is a the flower while cauliflower is like the pre flower formation.
They’ve both been bred differently so if you wait on a cauliflower it will not become broccoli.
But they’re both Brassica oleracea (as are cabbage, sprouts, kale and more)
