Green Jade (broccoli, string beans and snow peas)

“Green Jade” is a vegetarian dish served at many Chinese-American restaurants. The dish contains broccoli (the “green jade”), plus such ingredients as snow peas, string beans, green pepper and zucchini. The dish often has three green ingredients and is called “Triple Green Jade” or “Triple Jade.”
     
“‘Green jade,’ a side dish of broccoli, snow peas and baby corn” was printed in Newsday (Long Island, NY) on August 16, 1987. “Green Jade. Usually means the dish includes an abundance of green vegetables such as snow peas or broccoli” was printed in the book How to Open and Run a Successful Restaurant (1995) by Christopher Egerton-Thomas. “Green Jade Delight” was printed in the Standard-Speaker (Hazleton, PA) on October 29, 1998. “Triple Green Jade ... 3.85 (Broccoli, Snow Peas, Zucchini)” was printed in The Pantagraph (Bloomington, IL) on June 15, 2001.
 
Non-vegetarian “Green Jade” dishes include “Green Jade Chicken” and “Green Jade Scallops.”
