Pasta sauce is sometimes called “gravy.” “Jersey Italian Gravy” is a commercial product that was trademarked with a date of first use of August 10, 2011.
 
The founders of the Jersey Italian Gravy company produced a product for Stew Leonard’s supermarket (with stores in East Meadow and Farmingdale, Long Island) in 2016 called “Long Island Italian Gravy.” There is no regional difference between pasta sauces on Long Island and in New Jersey, however.

I then soon realized that I was on to the next best thing…Jersey Italian Gravy! That’s when my wife chimed in and said, “Why don’t we jar and sell this stuff?” Good idea honey! Today, I am happy to share with you that same Italian gravy I fell in love with years ago. Opened in 1969 with seven employees in Norwalk, Connecticut, the chain now includes six stores in Connecticut and New York. The newest location opened in August 2017, in East Meadow, NY.

A.
The product evolved in New Jersey. We’re from New Jersey. It’s still a local product. It’s made 60 miles from where we are. Our customers ask us all the time, “Do you use Jersey tomatoes?” We say we used to, but they’re inconsistent. One crop is too sweet, one is too bitter, one is too seedy. So we switched to a California tomato.

Gravy is Italian read sauce cooked with meat in it. The meat is what makes it gravy. I’m just calling it by it’s name
