Texas Twinkies (bacon and brisket wrapped cream cheese-filled jalapeño poppers)

“Armadillo Eggs” or “jalapeño poppers” are cheese-stuffed jalapeños. “Atomic Buffalo Turds” (ABTs) or “Cowtown Wolf Turds” are bacon-wrapped stuffed jalapeños.
 
“Texas Twinkies” add brisket to the bacon-wrapped cream cheese-filled jalapeño poppers. The product, perhaps at first glance, looks like a Twinkie (a trademarked sponge cake with a creamy filling). Texas Twinkies were invented at Hutchins Barbeque (McKinney and Frisco, TX) and were popularized in the articles “How to Make the Ultimate Jalapeno Poppers in Maxim on December 21, 2015, and “Smoked in Texas: Texas Twinkies at Hutchins BBQ” in Texas Monthly on November 7, 2016.
 
The name “Texas Twinkie” has not been trademarked.

The Texas Twinkie jacks up the usual cream cheese-filled happy hour fave with fatty marbled brisket and an unctuous armor of crispy, thick-cut bacon. Then this mutant morsel is triumphantly painted with a homemade BBQ glaze. The best part? You don’t even need a deep fryer. Just a crazy urge to make extra-fatty jalapeno poppers at home, because that’s your idea of fun. Now let’s get poppin’.
   
Ingredients to make 12 Texas Twinkies:
• 12 whole jalapenos
• 1.5 pounds of marbled brisket
• 12 tablespoons of Philadelphia Cream Cheese
• 12 thick-cut strips of bacon
• 2 tablespoons of Kosher salt
• 2 tablespoons of coarse ground pepper
• 6 oz. of BBQ Sweet Glaze

Texas Twinkies are Hutchins’s version of a stuffed, bacon-wrapped jalapeño, but with brisket. “There’s close to a quarter pound of meat in each one,” owner Tim Hutchins tells me. I didn’t weigh it, but I can tell you that two of them could make a meal. Hutchins credits co-owner Dustin Blackwell with the idea, which they brought to the menu two years ago. They’re a hot seller. Hutchins goes through 350 each week from Friday through Sunday, the only days they’re available.

Texas Twinkie is a jalapeno popper, loaded with layers of smoked turkey, ham, or chicken), cheeses, and a large chunk of Texas smoked brisket and wrapped in bacon. The whole thing is then smoked and finally grilled!
We first learned about the Texas Twinkie, made famous by Hutchens BBQ in McKinney, Texas in an article in Texas Monthly. Then we added the Cafe Bagheri touch!

Texas Twinkies -Jalapeños Stuffed with Smoked Brisket

These “Texas twinkies” were named and made famous by Hutchins BBQ in McKinney, TX. Many of us have been stuffing peppers with cheese and meat and wrapping them in bacon for as long as we can remember but this version uses whole extra large peppers stuffed full with delicious smoked brisket, wrapped with a thick slice of bacon and smoked until perfect.

16 ounces cream cheese
1 lb smoked brisket
1 lb chorizo (optional)
2 cups smoked gouda, shredded
