“What do you call someone who doesn’t eat animal products and loves to gamble?"/"A Las Vegan.”

A person from Las Vegas (Nevada or New Mexico) is a “Las Vegan.” This is pronounced “Vay-gan.” Such a person may or may not also be a “vegan” (usually pronounced “vee-gan")—someone who doesn’t eat animal products.

“Las Vegan: Someone who doesn’t eat any animal products unless they are served at casino buffets” was posted on Twitter on November 27, 2009. “For example, what do you call a gambler who doesn’t eat meat or eggs? A Las Vegan!” was posted on Twitter on June 26, 2013.

A riddle was posted on Reddit—Jokes on November 20, 2017:

Q: What do you call someone who doesn’t eat animal products and loves to gamble?
A: A Las Vegan.

Wikipedia: Veganism
Veganism is both the practice of abstaining from the use of animal products, particularly in diet, and an associated philosophy that rejects the commodity status of animals. A follower of either the diet or the philosophy is known as a vegan. Distinctions are sometimes made between several categories of veganism. Dietary vegans (or strict vegetarians) refrain from consuming animal products, not only meat but also eggs, dairy products and other animal-derived substances.

Wikipedia: Las Vegas
Las Vegas (/lɑːs ˈveɪɡəs/, Spanish for “The Meadows"), officially the City of Las Vegas and often known simply as Vegas, is the 28th-most populated city in the United States, the most populated city in the state of Nevada, and the county seat of Clark County. The city anchors the Las Vegas Valley metropolitan area and is the largest city within the greater Mojave Desert. Las Vegas is an internationally renowned major resort city, known primarily for its gambling, shopping, fine dining, entertainment, and nightlife. The Las Vegas Valley as a whole serves as the leading financial, commercial, and cultural center for Nevada.

Every time I read “Las Vegan,” I think it’s a Spanish twist on someone who doesn’t eat animal products, rather than a resident of Las Vegas.
