“Simply Good Taste” (Cosi Sandwich Bar)
Cosi Sandwich Bar (or just "Cosi") began in New York City in 1996. It's now a sandwich chain found in several states. "Simply Good Taste" is its not-too-well-known slogan.

Così is a restaurant chain founded in 1996, which primarily offers sandwiches and salads. The name comes from the opera Così fan tutte, which was a favorite of the original owner. There are more than 90 restaurants in 17 states and the District of Columbia.

Tiffany Muse, 28 years old, lived in Paris for two years and almost every day wentto the Cosi Sandwich Bar. So did Jay Wainwright, 25, and his brother, SHep, 22, when they lived in Paris.

When they all returned to the United States, they craved a Cosi sandwich, which led them to a larger idea. Last week, they opened the Cosi Sandwich Bar at 165 East 52d Street, between Third and Lexington Avenues.

All sandwiches are made to order, with the bread, it is promised, no more than 30 seconds old. There are about 20 sandwiches, among them tandoori grilled chicken and coriander roasted tomatoes. Ms. Muse learned how to make the bread from the original owner.

Sandwich construction as practiced by Mr. Servisi may be an art, but the Cosi Sandwich Bars, with four branches in Manhattan, leave the sandwich-making to the customers. As you line up at the counter, you choose from ingredients like tandoori chicken, coriander-roasted tomatoes and sun-dried-tomato spread. None of the ingredients stand out. The glory of Cosi is the crisp Roman flatbread, tasting of olive oil and salt, which is baked right in front of you.

The museum, which bills itself as "the fascination destination," is known as COSI (pronounced CO-sigh). The Ohio cafe is called Cosi (pronounced co-SEE). Xando, incidentally, is pronounced ZAN-doh.

Xando Cosi was formed as a result of a 1999 merger between Xando Coffee and Bar and Cosi Sandwich Bar, which was the 1996 brainchild of Mr. Wainwright's sons, Jay and Shep. The chain has outlets in 11 states, Mr. Wainwright said.

Cosi sandwich shops won praise in Zagat's 2001 Survey of New York City restaurants fortheir flat, crispy bread.
